Quick coconut shrimp is a fun, simple side to include during the back-to-school season! Many people, children and adults alike, enjoy the crispy and sweet coating that is different from normal cocktail shrimp. With a crispy coating and a hint of coconut, your kids will love this special treat! Ingredients
  • 1 1/4 cup flour
  • 1/4 teaspoon seafood seasoning
  • 3/4 cup pineapple juice
  • 1 egg
  • 2 cups flaked coconut
  • 1 pound peeled and deveined shrimp
Method In large bowl, combine egg, flour, seasoning, and pineapple juice. Dip shrimp into batter, then dredge in coconut. In deep fryer or skillet, heat oil to 375 degrees, and fry each shrimp until golden. Turn occasionally. Drain and serve! We hope that you and your kids enjoyed this recipe!
