Enjoy This Nutritious Recipe That Is Good For Your Heart
February marks the month when every store seems to be swathed in pink and red and strewn with heart-shaped candies and cards. Let these serve as reminders not just to pick up something to give your sweetheart, but also that it is Heart Disease Awareness Month. Cardiovascular disease is the number one killer of women and men in the United States, so it is important to lead a heart healthy lifestyle to reduce your risk of this disease. To help, here is a heart healthy recipe.
- 1 medium shallot, sliced thinly
- 1 bunch (10 oz.) of broccolini, chopped roughly
- 1 medium bunch of radishes, sliced thinly
- 12 oz. of whole-wheat rigatoni
- 1/2 teaspoon of orange zest
- 3/4 teaspoon of kosher salt
- Freshly ground black pepper to taste
- 1 tablespoon of sherry wine vinegar
- 3 tablespoons of extra-virgin olive oil
- 7 oz. of crumbled feta cheese
Soak the shallots in cold water for ten minutes; drain. Boil water in a large pot and add the broccolini. Cook for two minutes, then add the radish. Cook for thirty more seconds, or until just beginning to become tender. Transfer immediately to a bath of ice water, drain them, and pat them dry.
Add the pasta to the boiling pot, and cook until al dente.
Whisk orange zest, salt, and pepper into the sherry vinegar. Slowly add in the oil, while continuing to whisk. Add the rigatoni, shallot, broccolini, and radish to this mixture and toss. Add the feta cheese and toss one last time.
This dish can be served warm or at room temperature.
