Yummy Holiday Dessert!

This holiday recipe for bit-sized, mini brown-sugar cheesecakes is the perfect dessert to add to your holiday table! Here's what you'll need to get started.
Ingredients:
1¼ c. graham cracker crumbs
3 tbsp. granulated sugar
¼ tsp. salt
5 tbsp. unsalted butter
1 tsp. unsalted butter
2 package cream cheese
2 large eggs
2 tbsp. fresh lemon juice
1 tbsp. lemon zest
1 tbsp. vanilla extract
1 tsp. ground ginger
1 c. light-brown sugar
½ c. thinly sliced candied ginger
Instructions:
Start by pre-heating the oven to 350 degrees. Make the graham cracker crust first. In a small bowl, mix the graham cracker, sugar, and salt and then add in butter. In individualized baking cups, place approximately 1 tablespoon of crust batter in a mini-muffin pan. Pack down the crust and bake for 5 minutes. Reduce heat to 300 degrees.
Now it's time to work on the cream cheese filling. In a large bowl, beat the cream cheese for about 2 minutes, or until it's light and fluffy. Next add in the eggs, lemon juice, vanilla, ground ginger, and brown sugar. Fill the cups will the cream cheese filling and bake for about 20 minutes. Let cool and refrigerate. When ready to serve garnish with candied ginger and enjoy!
