Ingredients:
4 wonton wrappers
Sesame oil
Kosher salt
Freshly ground black pepper
4 salmon pieces
10 oz. mixed greens
1 cup shredded carrots
Dressing Ingredients:
2 tbsp. soy sauce
1 piece ginger
1 garlic clove
2 tbsp. scallions
1 tbsp. sesame seeds
1/4 c. vegetable oil
3 tbsp. white vinegar
2 tbsp. honey
1 tbsp. sesame oil
Start by preparing the fish and heating the wontons. Turn the oven to 475 degrees and prepare a baking sheet with the wonton strips cut into half inch pieces. Season them with sesame oil, salt, and pepper. Pop them in the oven until they're golden brown.
Then cook the fish in a flat iron skillet. Add a little olive oil and a little salt and pepper and cook until the fish flakes easily with a fork.
Next, make the dressing. Combine the soy sauce, ginger, garlic, scallions, sesame seeds, vegetable oil, vinegar, honey, and sesame oil until thoroughly mixed. Then put the dressing in the refrigerator until you're ready to serve.
Prepare your mixed greens and add the other vegetables. Add in the dressing and toss until all the leaves are coated. Then add the salmon and crispy wonton.
