Easy Fall Caramel Corn (Courtesy of AllRecipes.com)
Ingredients:
4 quarts of popped popcorn (cooked microwave popcorn or bagged popcorn is fine)
1 cup brown sugar (either light or dark)
1/2 cup butter
1/4 cup light corn syrup
1/2 teaspoon salt
1 teaspoon vanilla extract
1/2 teaspoon baking soda
Place the popcorn into a large brown paper lunch bag. (Do not use a plastic or zipped bag.) Set aside.
Mix the remaining ingredients, except the baking soda, together in a microwave safe dish. Heat for three minutes in the microwave before taking it out and stirring well. Return the pan to the microwave and cook for an additional one to two minutes. Take out the microwave and stir in the baking soda.
Pour the entire mixture over the popcorn in the paper bag. Shake well to coat the popcorn. Place the bag in the microwave and cook for one minute. Take the bag out, flip it over, and cook for an additional minute. Carefully remove the popcorn from the bag and place it on waxed paper to cool. Store in an airtight container and enjoy!
