1/2 cup fat-free sour cream

1/4 teaspoon freshly ground black pepper

3 garlic cloves, minced

1 (14-ounce) can artichoke hearts

1 (10-ounce) package frozen chopped spinach

1 (8-ounce) block 1/3-less-fat cream cheese, softened

1 (8-ounce) block fat-free cream cheese, softened

6 ounces part-skim mozzarella cheese, shredded and divided (about 1 1/2 cups)

1 ounce fresh Parmesan cheese, grated and divided (about 1/4 cup)

Start by preheating the oven to 350 degrees. Before you mix the ingredients be sure to prepare the artichokes, spinach and cheese. You’ll need to drain and chop the artichokes, thaw and drain the spinach, and soften the cream cheese. In a large bowl, combine the sour cream, artichoke hearts, spinach, cream cheese, garlic, and pepper. Once the ingredients are thoroughly mixed, add in one cup of mozzarella and two tablespoons of Parmesan and stir.

Transfer the mixture over to a baking dish and cover the top of the mixture with the remaining mozzarella and Parmesan. Put the baking dish in the oven and bake for about 30 minutes, or until bubbly. For added deliciousness, turn on the broiler and leave the cheese to brown for about three minutes.

Remove from the oven and enjoy with your favorite chips, bread, crackers, or even veggies!
